**Snowman Cookies**
3 ½ c. flour
1 c. butter, softened
8 oz. cream cheese
2 c. white sugar
1 tsp. baking powder
1 egg
1 tsp. vanilla
½ tsp. almond extract
¼ tsp coconut extract
In a mixing bowl, stir together flour and baking powder and set aside.
In a stand mixer or large bowl, beat butter and cream cheese until incorporated, about 30 seconds. Add sugar and beat until fluffy. Add egg, vanilla and extracts and beat well.
Gradually add the flour mixture to the cream cheese mixture, scraping the bowl sides after each incorporation. Cover and chill overnight.
Shape dough into three balls: a 1-inch, ¾-inch and ½ inch. Gently press them together on a cookie sheet so they resemble a snowman. Press two mini chips into the smallest ball for eyes, and one decorative candy button or mini M&M into the medium ball, and two into the large ball for buttons.
Bake at 325 degrees for 15-18 minutes, until edges are firm and cookie bottoms are golden. Carefully transfer onto a wire rack for cooling.
Using frosting, decorate the cookies with a scarf and attach a halved rolo to the head, affixing it with frosting. Dust with powdered sugar and enjoy!
